Hello, old friends! I'm taking a quick hiatus from my glorious maternity leave to bring you some printable paper goodies to tide you over before I make my full-on return in the coming weeks.
Summer in Chicago is oh-so-enjoyable for many reasons, but the sunshine, not-so-humid warm temperatures (I'm from Georgia, mind you), and walkable farmer's market freshness are among them. This sweet season has allowed for several Saturday strolls down the street to our neighborhood market. Given that simple snacks and meals are high-priority for us these days, I've been big on buying healthful, fresh produce and ingredients that are easy to throw together quickly.
Fruity Açai Bowls
One of my favorite quick and satisfying summer lunches is an Açai bowl. I love how versatile they are. When I'm unable to use fresh fruit fast enough, I throw the rest in the freezer to have on-hand for blending up these yummy bowls. For this one, I used:
• Frozen Açai Puree (from Trader Joe's)
• Plain Whole Milk Greek Yogurt
• Frozen Blueberries
• Frozen Bananas
• Frozen Strawberries
• Almond Milk
• Flax Seed Meal
Toppings can include, but are not limited to:
• More fresh berries and fruit, sliced
A Freebie—Just Because!
Because I'm finding ways to become more efficient at home and on my errands (toting a newborn in and out of a hot car is NO JOKE), I created these printable market lists for organizing meals, notes, and grocery lists. I usually start by thinking through meals and snacks I want to make throughout the week, and then go through each ingredient list, adding them in the appropriate section so that I can more efficiently get through the store. I hope you find them as helpful as I have.
Now, go forth! I know I've got some fresh basil and mozzarella are calling my name. Caprese salad, here we come.
